Mulled wine recipe by Chef Nicole Illa, Grand Hyatt Goa

Recipe

Red Wine                   1 litre
Cardamom green    8 pieces
Clove                        14 pieces
Star anise                  4 pieces
Nutmeg                      1 pinch freshly grated
Cinnamon stick       2 pieces 10 cms long
Coriander seeds       1 tea spoon
Aniseed green          1 tea spoon
Orange                      1 piece
Water                   500 ml
Sugar                   250 g

Method

  • Bring water and sugar together to a boil
  • Remove any impurities and place sugar syrup aside
  • Cut the orange into quarter pieces
  • Place the wine cooking pot together with all the spices
  • Heat the wine gently up on the stove and infuse the wine with the spices
  • Strain the mulled wine to remove the spices
  • Add the sugar syrup to taste
  • Serve the mulled wine hot

The red wine can be replaced with white wine if desired
